According to a short video that Google’s Martin Splitt posted on the Google Search Central YouTube channel, your page can get removed from Google’s search results if users do not interact with it. In the video, it is explained that there are certain reasons why your page is not showing up in search results like the query has a low search demand, it has been asked weirdly/differently or Google thinks that there are better pages than yours which can answer the query perfectly. Performance issues are also the reason, especially if a page is indexed but later removed or it didn't perform well with the users.

The video was an answer to a question some users asked saying that their page has been indexed with the pages being added to the sitemap but they are not appearing on search. Google says that it can happen and there are some steps that each webpage has to go through to appear in search results. The first step is discovery where Google has to find the URL and visit the website to see what content is there. After that, Google indexes the content which means that if it is relevant, it is added to Google’s database. When a user asks a related query and Google thinks that the page is relevant to it, it shows up in search results.
The issue is in the ranking stage where Google has to decide what to show for a search query and your page isn't chosen. This means that your website’s content isn't relevant or lack value, other pages are better optimized or your page’s SEO is affecting its visibility. If your page drops from the index, it means that Google no longer finds the content relevant or has better alternatives. If you want your page to be relevant, make sure to improve and review your content so users can keep on returning.
